Good Morning!


I have to confess, our daughter sleeps with us.  I know... gasp, cringe, think what you like.  I secretly love it!  She has been in our bed at least a year.  She was sleeping in a toddle bed 100% of the time and one of the few times she was sick, we put her in bed with us and slowly the 100% became our bed.  With complete laziness on our part, it had never ended.  Don't worry for my husband or our marriage, this does not impede our "hanky-panky".  (I can't believe I just said that, LOL!)  My husband works extremely early so his bedtime is very early.  Needless to say, we have to find "other" opportunities throughout our days anyway, which,  I'm guessing, just comes with being a parent.

Again, I love it!   Don't get me wrong, there are nights when she tosses and turns, or doesn't go to bed right away and I get frustrated and I don't think I could do it with anything less than a King, that is a fact, but this is one of the favorite parts of my day.  Typically my three year old is the one waking me up and it is beautiful.  She is such a sweetheart, putting her hand on my face and whispering, “It’s good morning time mom”.  I love it!  We lay with each other, snuggling and discussing what we will do that day or what she wants to eat for breakfast.

Times like these are what I will never get back when she is grown up or even when she starts school.  I cherish each and every day that I am lucky enough to get to do this with her.  I want to soak up every second that I can with her before she is too old or too busy to have morning cuddles with me.

Long story short, soak it up, when you can and while you can because life goes by fast and they grow up faster!

Recycling Crayons


Wait!  Before you toss all the tiny pieces of broken crayons away, save them in a bag or container.  You can create new chunky crayons.
1.  Peel the wrappers off of the crayon pieces. (Some labels were difficult to come off so I sliced up the side of the crayon with a tiny knife and the wrappers came right off.)
2.  Place the crayons into muffin tins or silicone forms.  On many websites I noticed people mixing colors, which is fun, but I have a compulsion to organize everything, so I separated them by color.
3.  I found that 275 degrees is a good temperature.  It allows the crayons to melt at a nice pace.  I left mine in for about 10 minutes.
4.  I stirred each cup with a toothpick after I removed them from the oven, but the crayons still settled in layers for some colors.
5.  I left the tins on cooling racks while we went to dinner.  When we came back they were set.  I turned over the pan and they popped right out.

My daughter had fun watching them melt in the oven and I feel like I have saved something that would normally be a waist.  I know crayons are inexpensive, but it was a fun project to do with my daughter and who doesn't love to use everything they have to the fullest?!

Fiori Di Zucca...Fried Zucchini Flowers

Every summer I grow zucchini plants and every year we have plenty of zucchini for breads, cakes, frying, roasting, and casseroles.  My family's favorite thing that I make from a zucchini plant is fried zucchini flowers.  The first time my husband and I ate them was in Rome on our honeymoon in a restaurant recommended by my father.  It is located just down from The Spanish Steps, tucked in the back of a Piazza Mignanelli called Ristoranti Alla Rampa.  They were so delicious we went back a second time.  We decided that this was something we couldn't wait to eat again until the next time we we are in Rome, so I make them at home now, every summer.

There are a few things to consider when harvesting the blossoms of a zucchini.  Everyone has there own method, here is mine.  To begin, I harvest over a few days to get enough to make a good size batch.  When harvesting them, remember that there are male and female flowers, I harvest both, but you will loose a few zucchinis if you harvest the female flowers, but it's worth it.  If you've ever grown zucchini before, you know that you could probably spare a few. The male flower has a thin stem and fertilizes the female flower, which has a thicker stem and produces the actual zucchini fruit.  You can stick to just the male, but a special treat is when you have a small squash on the end of the flower.  I usually make one or two of these as a special treat.  

I harvest in the morning.  Late enough for some pollination to happen, but before the flowers close up for the day.  When harvesting, I leave about 1/2" - 3/4" of stem for easy batter dipping later.  I remove the stamen for stacking and storing, but some people leave them in.  I inspect the blossom and remove any insects, but do not clean them yet.  Then I stack them gently inside each other and ball up a small amount of paper towel and insert it into the top flower to hold it open.  I then roll the entire tower in a slightly damp paper towel and store in a sealed plastic bag in the crisper drawer of my refrigerator.  The whole time, I take plenty of care to be gentle to these delicate flowers.  They tear easily.



When I have harvested the desired amount, I clean them.  Some people just wipe because the flowers are so delicate, but I lay paper towel in a baking sheet.  I then hold the flower in my hand, cuffed around the blossom as a support and I let a light stream of water run into it the open blossom.  I take my opposite had and use one finger to gently swipe around the inside of the blossom.  I then dump the water and turn it upside down on the paper towel to dry.



Now that your flowers are ready, here is my recipe...

12 flowers
15 oz. of ricotta cheese
zest of 1/2 a lemon
nutmeg to taste
salt to taste
peanut oil (or if all I have is vegetable oil, I use that)
flour (start with 1/2 c.- 3/4 c.)
sparkling water
garlic salt to taste



I clean the flowers and allow them to dry a bit, as explained above.  I them mix my filling of cheese, lemon zest, nutmeg, and salt.  I taste it and make sure I am happy with the flavor, then I put it in a zip lock bag and cut off a small amount of one bottom corner for piping the filling into the flower.  At this time I heat the oil in a deep pot.  While the oil is warming, I mix the batter.  This is all about the consistency of the batter.  I like mine to be like pancake batter, thick enough to coat and stick, but not too thick that it does not coat evenly.  I sprinkle a little garlic salt over the flour and then whisk in the sparkling water.  I feel that the bubbles add a delicate lightness to the batter.  I line a baking sheet with parchment paper, hold a flower in my hand, cuffed gently around the outside like when I washed them, fill the flowers and lightly twist the tips of the pedals closed.  When the oil is hot, I hold the flower by the stem, dip in the batter, then place it in the hot oil.  I fry until golden brown, remove from oil, and place on cooling wracks set inside a baking sheet lined with paper towels.




I serve them solo, no sauce, nothing for dipping.  We enjoy the delicious flavor solo.  You could do many variations of this.  Serve them with a tomato sauce, in a pasta dish, or even in a salad.  Experiment with all aspects of this dish, the possibilities are endless.  I use any squash flower I have in my garden, not just zucchini.  I use pumpkin, yellow squash, and scallopini squash flowers.  You can also add herbs like basil or chive into your cheese as well as adding other cheeses like Parmesan.  An alternative for the batter is using beer in the flour to add another layer of flavor.  From researching online I have also seen that some people flatten them out wide, batter them without a filling and sprinkle them with sugar after being fried.  I think this may be my next experiment.

Mommy's Separation Anxiety

I recently enrolled my daughter in preschool and not necessarily because I thought it was the right step in her education.  I must confess that I did not want to enroll her, but she asked to go to school.  How could we say no?  So, I signed her up.  I think it's the fact that she is always with me and if she isn't with my husband or I, she is with one of our parents.  We aren't overprotective, well maybe I am a bit, but my in-law's live very close and always help out, so why call in an outside babysitter.
To test the waters, I took her to the supervised kids play area at the gym.  I was anxious to say the least.  Either the women that work in there thought I was crazy or they thought, oh no, not one of these moms.  I literally choked up.  With water in my eyes, I was asking their procedures.  They don't take them to the bathroom (they page me and I can take her), she needs socks to go in the play tubes and slides, & I need the wristband they assign me when dropping her off to pick her up.  Straight forward and simple stuff.  I took her to the bathroom one last time before I left and said to her, "Give me a kiss." and she did.  I left slowly and she ran off to play immediately, without a second thought.  I went through the gates and door and walking slowly, I watched her throughout the glass wall and she was already having a blast.  I took a few steps out of sight from her and went back.  "Oh, no!"  I thought, "Were did she go in three seconds?!"  As I walked back into sight of all the women that work in the care center, they all looked at me and pointed to her at the same time and smiled.  They must have thought I was a kook!  Where could she have gone in three second with five women watching her?  Ummm, she stepped over to the play kitchen that was just out of site.  What was I worrying about?  She would do great in there.  She is always asking to play with other kids.
Off to the locker room I went.  I dropped off my bag and headed into the gym.  I take two step on the elliptical and look over to see three other moms with the wrist band on.  Oh shit!  I forgot the wrist band.  Epic mom fail!!!  What was I thinking?!   Obviously I wasn't.  I felt awful and hurried back to the locker room, took it out of my bag, and put it on...tight!  I head back to the gym and step back onto the elliptical.  Now I manage to get five step on there and all of a sudden I hear over the intercom, "Blair Kramer, please report to the kid's care center."
My heart sank to my stomach,  I knew this was a bad idea.  I felt like I was a bad mom.  I jumped of the machine and scurried to the kids area with fear on my face and in my heart.  The woman at the door immediately said, "She's fine!  She said she had to poop."  I had to literally laugh out loud!  Her favorite word at the moment is poop and she is so matter a fact about going to the bathroom.  What a relief, she was fine.  I think I was glad that I had an excuse to see on how she was doing.  Bathroom run went fine and again I asked for a kiss, this time she blew me one and ran off.  Half of me was broken hearted, but the other half was relieved that she was having a great time.
Needless to say, I went to finish, actually, I went to start my workout.  When I was finished and showered, I went to get her, wristband and all.  She was helping the ladies clean up the play area.  I asked the women how she did.  They said she did great and they could use more kids like her!  Oh my!  All that worry for nothing.  I guess not for nothing, I love and care about my daughter so much and she is our life, but she is growing up and needs interaction with other children for her development.  The anticipation was definitely a struggle and was a bit painful to be honest, but to see my daughter playing and having fun was worth it.
What do they say?  "It's more painful for us than them."  How true is that?!  I survived and in a odd way I was proud of her.  To her she was having fun playing and making friends, but without even knowing it, she put me at ease.

My Own Fifty Shades, An Evolution Of Emotions…


Before I even started Fifty Shades Of Grey, I had many assumptions because of all the talk regarding these books.  It was mommy porn (nothing wrong with that), it was just a housewife’s fantasies, and it was filled with kinky dominating sex.  At one point I even heard that it was demeaning to women.  I was a bit reluctant to read them at first, but realizing that these books where becoming a pop culture staple, I gave in.

Once I began to read, I was filled with anticipation.  I loved this book and I had not even read about the kinky sex yet!  The wonder of what was coming would not allow me to put the book down.  I was addicted.  I wanted Christian Grey and wanted to be Anastasia Steele.  Then bam!  Finally, the hot sex hit me.  It was eye opening.  The lines being read made me consider that I may like some “other” things in the boudoir.  It wasn’t just the obvious spanking, restraining, and hair pulling that intrigued me.  I never realized trust and decision-making or the relinquishing of control were such sexy things.  These are important to me and I rely on them on a daily basis, a bazillion times a day.  I am a control freak!  To turn trust over to someone to make the decisions and keep me safe while in such a vulnerable situation, I never realized that these things could raise my intimacy to the next level.  I trust my husband and he makes decisions all of the time, but I always feel the need to maintain a level of order and supervision.  All I do all day long is make decisions, as a mother, wife, running a household, & as a business owner.  Could I find it in myself to let go and free myself of this burden, just for a small amount of time to achieve this intense intimacy?  It could be liberating and mind-blowing.

As I reached about half way through the second book, I became disheartened.  All the anticipation and excitement had now worn off and I was starting to compare my real life to this fantasy.  I started a crude and callous evaluation of myself.  I was a shell of who I thought I would be at this time in my life.  What was I lacking?  I have all of the main components that look great from the outside, like a great husband and daughter, a beautiful home, a business, but where were the main components that matter deep down to my inner being?  Myself.  My.  Own.  Self.

Was I happy?  Was I enough for my marriage?  Did my husband feel passion for me anymore?  How could he have passion for me if I did not have passion for myself?  I was coming apart at the seams.  This is right about the time when I wrote my previous post titled My Sister To The Rescue, where I revealed the details of a breakdown I had at my sister’s house.  I was wondering if I was failing at my life, my marriage, as a mother, at my business.   All of the “what could have been’s” were running through my mind.  Was I going to be a good enough example for my daughter, a strong enough role model?  Will I be able to emphasize to see the world and explore who she is and what she wants, if I am incomplete?  How would she be able to take advice from me?  Am I enough for my husband?  Am I sexy enough, strong enough, independent enough?  Professionally, how can I expect people to trust my opinion, when I don’t trust myself?  I am a 32 year old that feels like a 12 year old.  All of these feelings were spinning around me and I was in the center of the tornado.

Then my revelation happened!  After crying it out to my sister and a day of analyzing all of the thoughts running through my mind, I had an epiphany, many epiphanies.  One after another, building on each other like a volcano that was on the brink of eruption.  It wasn’t everyone else; it was me, myself, and I!  I have all of these perceptions of my relationships, and myself, but that is exactly what they were, perceptions, not realities.  The reality is that I am amazing.  I have the most loving husband who thinks I am damn sexy.  My daughter thinks I’m a great mom.  I have family and friends around me that are loving and supportive.  My business is slow because I have not put energy into it, not because I am bad at what I do.  I found the strength in myself that I had so carelessly and absentmindedly forgot I possessed.  I got married, bought a house, and become a new mother in a matter of a couple of years, and I lost myself in it all.  I finally remembered that I could do anything.  I recently lost twenty pounds (first time I have stuck to a goal since graduating from college).  I built a fence in my garden, a damn strong fence and I stood by that fence with a glass of wine in my hand and a huge smile on my face, feeling pride.  Pride in myself.  I had misplaced those feelings for myself.  I am a smart strong woman that has great ideas who can establish goals and not just meet them, but surpass them.

At this point I had finished all three books, amazing, I might add.  At the risk of sounding cliché, these books have changed my life and not in a sex deprived attention starved housewife kind of way.  Maybe it was perfect timing, divine intervention, or just simply that all the things in my life aligned perfectly?  Who knows?  But I am back.  Self aware, empowered, reassured, sexy, smart, & confident.  People are looking at me and treating me differently.  Is this because I am acting differently?  Is this because I am different?  It is because I am finally seeing what has always been here.  What we give off is what we get back.  If I feel sexy, I am sexier.  If I feel happy, I am happier.  Only I can change the things that need changing in my life.  I have to be happy to expect people to see happiness.  I have realized that my husband is not just trying to “get laid”, he actually thinks I am a sexy being and wants me, all of me.

I think women could learn some important life lessons when reading these books.  Let us all walk taller, feel sexier, and be happier.  We need to worry less of what others think of us and focus on what we think of ourselves.  As women , we need to support each other, appreciate each other's beauty and accomplishments, not knock each other down.  Embracing each other will make us stronger individuals.  When did it become impossible to be sexy, smart, strong, and confident all at the same time?  I feel as if we are taught that it is impossible to possess all of these qualities equally and still be successful.  It seems extremely difficult to be smart and strong while being sexy and confident in our society and still be taken seriously and without ridicule.  Woman’s liberation should be about utilizing everything we have, not just our minds.  We can exude sex without demeaning ourselves; we can be empowered by it.  I have realized that I can have control, control of myself and how I choose to be, how I choose to feel, and what I choose to accomplish.

Most importantly, I am taking away from these books appreciation and realization.  I now appreciate each and every day and I realize all that I have and all that I am.  My business is transforming and becoming revitalized now that I am putting effort into it.  My life has become more organized and less stressful, even as I am accomplishing more.  My daughter is amazing!  When the stress of parenthood comes along, I remind myself of all the happiness she brings into our lives and that she is only three so I need to exercise a bit of patients.  I can let go and lose control a little and everything will still be okay, maybe things will be even better.  I have an amazing, hard working husband that loves me.  Our relationship has only become better because I am accepting of all the happiness and love he gives.  Our intimacy has grown to a new level and the great sex is icing on the cake!  I am fulfilled: my mind, my body, and my soul.

And now, maybe I shall read them again!

My Sister To The Rescue

Last Friday we went to my sister's house for a yummy dinner and some much needed family time.  As we watched our kids play together in the next room and our husbands drinking beer, grilling, & chit chatting, we started to catch up on what was going on in our lives the past week.  All of a sudden, a wave a emotion came over me and I realized that I had some heavy things weighing on my shoulders and didn't even realize it.
Right there!  Sitting right in my sister's kitchen, I began to have a meltdown.  We were just talking about life in general and in my brain was a gigantic brick wall tumbling down, first just a few bricks at a time and then it was a full on demolition!  Where was this coming from?
I realized that there was something going on here, and it needed out of my subconscious or I was going to implode.  So instead, I exploded.  I exploded with tears.  They came so fast and I could not stop them. I started having these tiny revelations and the kept coming like dominoes set in detailed design, I tapped the first one and the rest just kept going.
Am I depressed?  Am I unhappy?  Am I a failure?  I had a couple tastes of success in the past few weeks and I start to question my entire being.  I built a fence!  Yes, me, myself, and I.  (Much to the chagrin of the old man at the hardware store who said to me while I was purchasing the items, "YOU are going to build the fence?")  I also, for the first time in my life, stuck to a healthier way of eating and it worked (novel concept, I know).  I get this taste in my mouth and as I am talking to my sister, I realize that it has been far too long since I have had these feelings.  Feelings of success, accomplishment, confidence, and just plain being proud of myself.  The, let me take a step back and pat myself on the shoulder feeling.
Who have I become?  I am the wife of an amazingly hard working man.  The mother of an adorable and smart almost three year old.  But who am I?  I have forgotten!  Maybe this is why I am having these feelings of melancholy.
I start to evaluate my life.  How I feel about all things that I deal with on a daily basis.  How I feel that my business is failing, how my husband seems to cringe when he walks in the door from work, and how I am losing control of my daughter.  The tears are pouring out even harder.  I look to make sure my daughter is still involved with the toys in the next room, I peek to see if my husband is still involved in guy talk with my brother-in-law, and I continue to cry.
As I am trying to articulate all of these erratic feelings and I start to realize what my problem is.  When you are a stay-at-home mom, taking care of your child, cleaning, cooking, keeping your home and family organized, you start to lose pieces of yourself.  At least this is how I was feeling and I was not putting two and two together.  Something deep inside that was sneaking up on me, without even realizing it was there, let alone what it was.  From all the day to day things that I do, to the nonstop decision making, to the fear of hoping I am doing it all right, I was exhausted.  It had taken a mental toll on me and I was just beginning to realize it.  Sure I know I'm tired all the time, but this was different.  This was a revelation!
It was like I was watching an emergency surgery and the doctors were losing their patient.  The alarms started sounding and the paddles came out.  CLEAR!  One thump, and nothing but a consistent buzz and a flat line.  CLEAR!  I hear again.  Again, nothing but a buzzing flat line.  Again, CLEAR! And finally, beep, beep, beep.  And relief fills the air.  The patient is back.  She has been brought back from the brink.
I realized that I am not a failure at business, that the market is bad and I will be successful when we reorganize and restructure.  The downtime has allowed me to put in more effort and time with my daughter.  I realized that my husband doesn't cringe when he walks in the door.  I do, I worry so much that I am doing a good job that I overlook how much he is in love with me.  How hot he thinks I am, how thankful he is that I am able to stay at home with our daughter.  How money is tight, but it's OK because we are a team.  I realize that my daughter is about to turn three.  She is testing me every inch of the way because that is how she learns.  I realize that if I am happy, happiness will come pouring back to me.  When I am sad, it's like a filter on a camera.  Everything is perceived differently, you have to choose how you want to experience your life.  I choose to be happy!  What a relief, the weight has been lifted!
The whole time I was going through this range of emotion, thankfully, my sister listened with an non-judging ear, giving me advice, playing devil's advocate, and just plain being there to listen.  I couldn't imagine having gone through all this without her help.  She talked me down, walked with me, hugged me, and was my sister!

A Nod To The Mojito

I wanted to share the recipe I use for this delicious drink that I love in the summer.  It is light and refreshing, the mojito!


Things you need...

A tall glass
A muddler
Ice
Club soda
10-15 mint leaves (depending on size)
1/2 a lime - sliced into 4-6 wedges
Light Rum
Simple syrup (equal parts water and sugar dissolved over low heat)

I take the glass, squeeze in the limes and drop them in.  I add the mint leaves whole and muddle.  I then add in the light rum and simple syrup and gently stir.  At this point, I fill my glass with ice and top off with club soda.  I give another gentle stir and garnish with a sprig of mint.

Cabinet Canvas

For the holidays, some of my girlfriends decided to exchange grab bag gifts.  From looking at my trusted Pinterest, I decided to go with the wine glasses dipped in chalkboard paint.  They turned out very cute and were a big hit, but I had a lot of chalkboard paint left over.

I figured out a place to use the paint!  When we moved into our home, there were things I new needed to be fixed immediately.  The faded end caps on our cabinets was high on the list.  But, as everyone knows, if not threatening injury or if it is not something that is a necessity, cosmetic things can go by the way side for more important projects.  After a couple of years, my step father stained the faded panels for me.  Problem solved, except for one end cap.  So comes the solution... Chalkboard paint!

First I sanded the surface.  Then I wiped everything down with a damp cloth, vacuumed, and taped off the edges.  I also primed the surface with magnetic primer.



My first attempt went well and my daughter loved it.  It actually blended very well into my kitchen's black appliances, but I got the itch and could not stop there!  The end cap from the cabinets surrounding our refrigerator is hidden when you first walk into our kitchen.  It is also right next to our dining room, so I figured this was a perfect spot to display a menu for when we entertain.  Even better, my husband is a home brewer and I thought he could display his brews for when guests come over, just like a real micro-brewery.  It will also come in handy for quick notes, lists, and reminders.


I hope this inspires you to paint something new!

Seeds Of Change

It's still cold out, but it's that time of year again.  The time of year when the garden had been planned and the seeds are ready to grow, now we just wait for the weather to change.  This year my husband and I have decided to try an all heirloom garden.  Imagining spring and what will be growing in our garden, what I will be cooking with all summer, and what I will be canning and freezing for the rest of the year.  My green thumb is itching!

The garden will finally be full size this year. My husband has been adding beds every year to get the garden to its full size.  The finishing touch on the basic format of my garden with be a fence to enclose it all.  A girl can dream, I really hope we put it in this year.

I usually start seeds indoors to give some of the plants a head start.  I live in Zone 5, so we are cooler a bit longer.  This year I am trying a hand full of new items.  Broccoli, cauliflower, brussels sprouts, cabbage, fennel, pak choy, leeks, okra, beets, and strawberry spinach.  I will also be trying out new varieties of what we plant every year, like tomatoes, beans, peas,  cucumbers, summer squash, winter squash, melon, carrots, kale, corn, eggplant, salad greens, onions, sweet peppers, hot peppers, radish, some new basils, and stevia.  I will finally be able to harvest my rhubarb, but I think my asparagus needs one more year.
I will post pics as the garden progresses this season.

It is so exciting to see the start of our garden for this year.  It has been close to a week and we have this much growth.  There is still time to start your seed, but not much.

Grapefruit, It's Great Fruit

When I see the giant 15 lb. bags of grapefruit in the grocery store and they are on sale, I have to buy them.  The are so delicious and my entire family loves them but, I always felt like I end up throwing some away after a while.  Bottom line, there is a lot of prep to enjoy this fruit compared to other fruits.  I know this sounds lazy, but its true, when I am looking for a quick and not so messy snack for my daughter, grapefruit doesn't jump out at me.
The last few times of have purchased grapefruit I realized a way I can make them more convenient and not waist one grapefruit.  First, I split the bag in half, in case someone wants a whole grapefruit.  Then I peel and segment the grapefruit and store all of the segments and juice in the fridge, so all you need to do is scoop yourself what you want and there is no fuss.  But, when I say peel, I am not peeling in the sense of an orange, I am using a knife.  This eliminates, not only the peel and white pith from the entire fruit but the membrane from each segment as well.  Then you are left with a easy snack, an easy addition to a salad or vinaigrette.  You also have juice and fruit that is easily juiced for, obviously, fresh grapefruit juice, but also for cocktails like grapefruit margaritas.  When you do a large amount at once, it saves lots of time.



1)  Have a container, cutting board, and a large sharp knife.
2)  With a large sharp knife, cur the top and bottom off of the fruit.
3)  Set fruit on a flat side and trim chunks of peel and white pith from the side of the fruit, leaving some in between each trim.  (I do this because, if you take large swipes, you loose some of the yummy fruit.  This way you are maximizing the flesh you save from the whole process.)
4)  Go back around and trim off the small amount of peel and pith left over.
5)  At this point, if there seems to be more flesh than usual left in the peel scraps, I will squeeze them over the container and get the juice out of what I missed.
6)  This step takes some care, so pay attention to what you are doing.  Hold the fruit in your hand so the segments are vertical.  Take your sharp knife and run it along both sides of the segment line, known as the membrane.  You will cut down to the center of the fruit.  As you do this, you will have your perfectly segmented pieces of grapefruit.
7)  At this point, you are done, but I like to squeeze what I have left in my hand into the container, and if there is lots of juice on the cutting board, I pour it in the container as well.

Sometimes You Just Have To...

I wanted to share some photos with you as a reminder that even though our kids do things that are frustrating, sometimes you just have to laugh!  Before I get too upset about something, I try to remember to ask myself a few things.  Is it hurting anyone?  In the grand scheme of things, is this a real problem?  Did my daughter have fun?
Yes, there was an entire roll of toilet paper on the floor, but she worked so hard at it.  Is it really going to hurt to have to grab pieces of toilet paper out of a grocery bag to use up the roll?  (Yes, this means I did not waste the roll, thank you very much!)
Maybe she was truly concerned that Woody wanted mashed potatoes or that Donkey was hungry for the dirt that is in the pot of a plant in my living room?

                

My daughter didn't do any of this in defiance, she is just learning, experimenting, exploring, and imagining.  Don't get me wrong, there is an ounce (and sometimes more) of frustration that creeps up for a few seconds, but again, lets remember what is really important.  Don't sweat the small stuff.  Toilet paper can be saved and used out of a grocery bag, Woody can be wiped off, and Donkey can be thrown in the wash, which took my less than a minute of my time in each situation, but I can't even begin to fathom the fun that my daughter was creating in her head when she was doing these three things!

Happy Accidents

Everyday I try to make environmentally friendly choices for my family.  One of the consistent ways we go about this is by composting.  We have a small container on our kitchen counter.  You can purchase elaborate contraptions at the store with charcoal filters and nicely sealing lids, but the flip lid plastic container that has a latch lock works just fine for us.  There is no need for the charcoal filters because we empty it every couple of days depending on how fast it fills it up.  


In goes our coffee grounds and filters, egg shells, and any other fruit and veggie scraps that we create.  One rule I follow is absolutely no animal fats!  


This is our compost pile.  This aspect is more my husbands department, unless our container on the counter needs emptying and he is not home.  He adds yard waste like pine needles, leaves, hops, and grass clippings. Every now and then he tosses it with a large pitch fork.  He made it out of wood scraps and placed it in the back corner of our yard.  It does not have a bottom so the worms can get into it and help along the process.  Before you know it, you have beautiful, nutrient rich soil for your garden.  Every spring and sometimes fall, depending on how full our compost pile is, we empty it into our garden. My husband tills it in to the existing soil and it creates a nice fresh bed to plant seeds and seedlings.

Every year we end up with at least one happy accident.  This is what I call it when seeds from our compost pile do not decompose and they end up growing in our garden the following year.  My in-laws bought our daughter a small pumpkin for Halloween last year and after the holiday we dumped it into the compost pile.  Sure enough, this year we had pumpkin pie pumpkins growing in our garden.  Sure, they aren't expected in my nicely planned out garden, but how could I get rid of the little seeds that could?!


This year we also had acorn squash grow from last year's garden scraps.

Fun With Baking

I am not a professional baker by any means, but that doesn't mean I can't have fun with my baked goods when I'm decorating.  I try out new recipes when I make small cakes and cupcakes, but if I am making a large cake, I use the same white cake mix every time.  So, to add a spark, even though it is very yummy cake, I get creative with the decorating.  Here are some pics of cakes and cupcakes I have made in the past.  Remember, your first taste is with your eyes!

To start out any decorating project, I plan, whether it is with ideas I have previously seen, pictures or sketches.  Then I execute, but I always stay open to changes.  Not every idea works out perfectly, so I try to go with the flow.


The first thought that I have is if there is a theme for the event the cake is for.  This was the cake I did for my nephew's Star Wars birthday party.  They brought me the figures and I we went from there.


Is your baked good for a holiday?  Google images and look up ideas in books.  The possibilities are endless.  This is my twist on the bunny feet idea from "Hello, Cupcake" by: Karen Tack & Alan Richardson - Rabbit Holes.  I added the Peeps.  Have fun and play around.


Try new recipes.  This is the Darkest Chocolate Crepe Cake (A Martha Stewart Recipe-January 2006 issue).  Keep in mind, if you are doing a specialty cake, use something that is in the recipe to decorate the baked item.  It is a simple, yet elegant idea.  This cake has hazelnut liquor in it so it is topped with candied hazelnuts.


Another idea is to keep in mind the age of a person if your baked good/goods are for a birthday party.  This is my dad's 62nd birthday cake.  I google age 62 and realized he was eligible for Social Security, so I thought I would make his cake comical and decorate it with a Social Security card.  Other mile stones are 16, 18, 21, 30, 40, etc.  Think outside the box!


Here is a birthday cake for my mother-in-law.  You can't go wrong with icing flowers, so pretty.  A trick I learned from my mother, you can build the icing rose around the tip of a pencil and then lift it off with scissors and then place it on the cake.  That makes it super easy!


Another way that you can't go wrong is using fresh items like fruit or flowers.  Keep the icing plain and just add some produce or some flowers to the top and/or sides.  Would you guess that this was a red velvet cake?  I made this for a Memorial Day picnic at my brother's house.


Last but not least, this is the first large scale cake I ever made.  It was for my daughter's first birthday party and it was pink themed.  I wasn't sure how well my decorative icing skills would be on a large scale, even though one of my jobs in and after high school was at Dairy Queen.  (Where I used to decorate ice cream cakes.)  It was so long ago and they were usually fairly simple.  I was making sugar cookies for the party favors, so I decided to add a few more cut outs to the batch.  I kept it simple and it ended up perfect!


Always look for ideas, everywhere!  There are pieces to your puzzle everywhere you look.  Keep a notepad with you or even take snapshots to remind you of ideas you like.  I always say that copying is the most sincere form of flattery, just remember to give credit where credit is due!
